There are two excellent ways to prepare broccoli stems. One is often
used in oriental cooking, and it involves slicing them thin at a
diagonal and steaming them with carrots, snow peas, whatever. The other
is to peel them and slice or dice them for almost any dish, including
finger foods, salads, steamed vegetables, etc. They are really
delectable when peeled and marinated in vinegar, garlic, water, and soy
sauce along with other firm vegetables.
