Amy, here is Mary McDougall's cornbread recipe. I think it's pretty good
and easy to make.
BASIC CORNBREAD
2 C. cornmeal
1/2 C ww flour
1/3 C. oat flour
1/3 C millet flour
4 t. baking powder
2 C rice milk
4 T. frozen apple juice concentrate, thawed
2 t. Ener-G Egg replacer, well beaten with 4 T. water
Preheat oven 375 Degrees
Mix cornmeal, flours, and baking powder together and set aside. Mix the
remaining ingredients together and pour over the dry ingredients. Fold
together briefly. Pour into a nonstick 8 inch square pan. Bake for 30
minutes, or untiil a toothpick inserted in the center comes out clean.
If you don't have the millet and oat flours substitute with more cornmeal
and ww flour.
If you have the oat and millet grains, you can turn them into flour in your
blender.
