Barb and other ff'ers,
Here's a really simple recipe for a ff apple crisp (or any other fruit
crisp). It calls for ff granola, which could be bought at your favorite HFS
or homemade:
3 c rolled oats or a combination of oats, barley flakes, rye flakes, wheat
flakes, etc.
1/2 c maple syrup or honey mixed with 1 tsp vanilla or almond extract
1/2 c raisins or currants or both
1 tsp cinnamon
Optional other spices: nutmeg, dried ginger, allspice. If you're not strict
about ff, you can add a 1/2 c chopped nuts and/or sunflower seeds.
Mix all ingredients together. Toast by spreading on a baking sheet
(preferably enameled steel or glass) and baking in a 375 deg. oven, stirring
every 5 min. until it's golden brown and smells excuisitely. This can also
be done on stovetop in a cast iron pan, except that you'd have to stir it
constantly or it'll burn. Store in a tightly sealed container in the freezer.
Apple Crisp
3 c chopped apples or other cookable fruit or berries
1/3 c strawberry preserves
rind from 1 orange or lemon, diced
2 c ff granola
honey or maple syrup to taste (you'd need it for sour apples or if you're
adding rhubarb)
optional: 1 tsp fresh diced ginger, cinnamon, other spices, fresh cranberries
Mix all ingredients in a 9x13 baking pan (I use a covered Corningware
casserole dish). Cover and bake at 350 deg (no need to preheat) for about
15-20 min. Remove cover, stir and bake another 10-15 min. Serve with warm
maple syrup or a maple syrup & brandy sauce.
