I work in the hospitality industry. Your caterers should do ANYTHING you
want them to. It's your money! Now, recipes for large quantities are
different than just blowing up small recipes, so you may need to help
them research. But bottom line is, take your dollars to someone who will
give you what you want. And refuse to be intimidated.
