You'll find that most Chinese stir-fries start with a combination of
garlic, ginger, and peppers that are diced, minced, grated, whatever.
These are generally stir-fried together prior to adding any of your
veggies. To adjust the heat, just add more peppers! My favorites are
serrano and jalapeno peppers. Just remember to wash and seed them
first!
