Preheat oven to 350 degrees F. Prepare a 9x13 cake pan with
cooking spray, then flour.
Whisk egg whites till frothy, then add sugar and applesauce. Blend
well, then mix in vanilla.
Combine all dry ingredients and add to wet ingredients mixing well.
Fold in grated carrots and nuts.
Pour mixture into prepared pan. Bake for approximately 1 hr 10
minutes or until toothpick stuck in center comes out clean. Remove
and allow to cool completely before frosting.
FROSTING: Cream together cheese and vanilla. Add powdered sugar,
mixing well. Spread evenly over top of cooled carrot cake.
NOTE: This recipe (without nuts, but including the frosting) contains 1/4 gram of fat per serving.
