green tomato recipes

Christi, I hope these help...

MINCE FILLING (for pies)

4 cups diced green tomatoes (about 1 1/4 pounds)
4 cups peeled diced tart apples (about 1 1/2 pounds)
1 cup raisins
1/2 cup honey
1/2 cup molasses
1/4 cup cider vinegar
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
(original also called for 2 tablespoons oil--omitted)

Combine all ingredients in a 3-5 quart saucepan and simmer 25 minutes. Put
into sterilized warm pint jars leaving 1/4 inch space at the top. Process in
a steam canner or boiling water bath for 10 minutes.

makes 3 pints.

To use: pour 1 pint into an 8 inch baking dish and cover top with pastry.
Bake at 400 for 12-15 minutes until brown and serve warm.

GREEN TOMATO RELISH

3 pounds green tomatoes, chopped (about 7 cups)
2 medium onions, chopped (about 1 1/2 cups)
1 large 6 ounce green bell pepper
1 cup cider vinegar
6 tablespoons honey
1 teaspoon celery seed
1/2 teaspoon cinnaom
1 teaspoon salt

Chop vegetables by hand or in a food processor. Combine with rest of
ingredients ina 3 quart pot and bring to a boil. Simmer uncovered for 20
minutes, stirring occasionally. Pour into sterilized half-pint or pint jars,
leaving 1/4 - 1/2 inch space at top. Process in a steam canner or boiling
water bath for 10 minutes.

makes 4-1/2 pints
