Responding to Dianne, simply peel the stems of the tough, fiberous skin,
and you have a wonderful, delicous finger food! When I prepare broccoli,
the stams rarely see the table, as I just eat them as I go, with a little
veggie salt or plain. The same holds true for the thick stems of
cauliflower. Again, peel off the outside, slice into desired shape--sticks
or rounds, and enjoy. If you want to be creative, add to salads, or make a
small salad with these crunchy, sweet treats, adding your fav. fat-free
dressing or garnish.
