Ruth Hoffman sent in a great-looking recipe for roasting garlic
in salt which I will certainly be trying next week (on
"vegetable market" day probably!). But it did raise one question
in my mind...what is kosher salt? How is it different from
ordinary salt? And what is "non-kosher" about ordinary salt?

PS I am getting a herb garden next week! I am in a college flat
and the gardener says that as no money has been spent on the
garden for ages, I can have whatever I want and I don't have
to pay!
