When I really want to impress with appetizers (as you may if this is a fund
raiser), I put
stuff in phyllo dough. I use a spray non-stick coating (like Pam) on the
layers instead
of the traditional lathering of butter. Here are a few ideas:
make an eggroll-type filling of carrots, celery, bean sprouts, chinese
cabbage and the like with some soy and a few drops of sesame oil;
mushrooms in a wine sauce
broccoli or spinach in a non-fat cheese sauce
tvp or other hamburger substitute with oregano, cumin and a bit of cinnamon,
raisins.
