Hi everyone, I am a major lurker. The main reason being I really don't like to cook, but like to collect
recipes for when I am in the mood. I normally haven't gotten very creative since going fatfree vege. But
last night I came up with the best soup. Lost 1/2 a pot to my mother after she tasted it. So while it is
still fresh in my head though I'd post it.
Potato Leek Soup (T)
5 lbs Potatoes, peeled, cubed, cover with water to prevent them from turning
4 Leeks chopped, whites only
2 medium/large size onions, chopped
8 Carrots, peeled chopped
8 Celery stalks chopped
1 1/2 c vege broth (I used the canned variety)
2 vege bouillon cubes (or 4 cups of homemade broth)
Parsely and Pepper to taste
Saute onions and leeks in the 1 1/2c of broth, until tender. Add rest of broth, carrots, celery and drain and
add potatoes. Just cover veges with water. Bring to a boil, then turn back and simmer. After 10 minutes
taste and add Parsley and pepper. When potatoes and carrots are done, scoup out and puree. I used a food
processor which let it a with little chunks, which added nice color (carrots) and texture. Mix back in with
broth. This makes alot, but did go fast.
