APPLE AND SPICE MUFFINS
1/2 c. whole wheat pastry flour ½ tsp. cinnamon
1/4 c. spelt or barley flour 1/8 tsp. nutmeg
1/4 c. unbleached white flour ¼ c. skim milk, soy or 1/4 1-2 tsp.
baking powder rice milk 1/4 tsp. baking
soda 1 T. applesauce
1/8 tsp. sea salt ¼ c. egg substitute
3 T. wheat germ 1 c. peeled, shredded
2 T. maple syrup granules or sucanat cooking apple
½ tsp. grated lemon peel
Toast wheat germ lightly in a 350 degree oven. This won't take long, so
watch carefully or it will burn. Place in bowl and add flours, baking
powder, soda, salt, maple syrup granules, and spices; make a well in center
of mixture. Combine milk, applesauce or oil, and egg substitute; stir in
apple and lemon peel. Add apple mixture to flour mixture, stirring just
until dry ingredients are moistened. Spoon batter into muffin cups greased
with mixture of lecithin and oil or canola cooking spray, filling
two-thirds full. Bake at 400 degrees 10-12 minutes or until lightly browned.
YIELD: 9 muffins
