I've tried two recently-posted recipes within the last week, and want to
thank the posters!
The Oven-Roasted Sweet Potatoes and Onions were great! They did take more
than 30 minutes--more like an hour. After the first 25 minutes or so I
added chunks of red and green bell pepper to the mixture; they were
delicious and made for an even more colorful and enticing dinner plate.
The Tomato-Bulgur Soup was also very good. I substituted millet for the
bulgur (since I didn't have any on hand) and cooked the soup perhaps 5-10
minutes longer than the recipe directed. The next day my SO wasn't feeling
well, so I reheated a bowl of soup for him and, with a thick piece of
unbuttered homemade bread, it was a great substitute for our previous
"comfort food when you're sick" lunch (Campbell's Tomato Soup and a buttery
grilled cheese sandwich).
Also, thanks to those who posted millet recipes in response to my request
a few weeks ago. Haven't tried them all yet, but I'm sure I will. I did
try Gabe Mirkin's Italian Millet Salad, which I found at the web site,
not in the recipe archives but in the section on diets, under Mirkin's. I
know that's not very precise, but once you get to the website it's pretty
easy to find. And the salad's really good.
