Quick, Southern Style Red Beans And Rice

Amount Measure Ingredient -- Preparation Method

6 Tbsp Bacos
2 Tbsp Water
2 Onions -- slivered
1 Clove Garlic -- minced
1 Cup Vegetable Broth
1 Cup Rice -- uncooked
1 Teaspoon Thyme
1 Teaspoon Salt
1 Bell Pepper -- diced
2 C Kidney Beans
Cut Onions into 1/2 inch wedges. Mince Garlic Clove. Dice bell Pepper.
Drain Beans.Heat water in skillet. Add Onion and Garlic to skillet; cook
until onion is tender but not brown, about 5 minutes. Add enough Water to
broth to make 2 1/2 cups. Add to skillet and bring to a boil.Stir in ri
ce, bacos, thyme and Salt. Cover tightly and simmer 15 minutes. Add Green
Pepper, cover and continue cooking 5 minutes.Remove from heat. Stir in Beans.
Let stand covered until all liquid s absorbed, about 5 minutes.

By the way, there were a few fatfree pesto recipes lately and I lost them when
I tried to "bust" them. Does anyone have them in MC format that they could
send me? I am working with an old version of MC and the @@@@@ doesn't work. TIA
