I just wanted to second this lunch idea.
A fruit and rice salad with a dressing of yogurt makes a great light
summery lunch.
I used white basmati rice, 1/2 an apple, 1 banana, golden raisins, and
vanilla yogurt the first time I tried this and it was wonderful.
The second time I had brown rice and no banana or raisins, and it wasn't
as good, due to the lack of fruit, I think. I added grape-nuts one time
for a nice crunch.
This is really quick, and can be easily put together right before you eat
it.
