POLYNESIAN STYLE STIR "FRY"
Serves Two
1 Tbs. finely minced garlic
1 cup pineapple chunks
1/4 cup pineapple juice
1 cup frozen broccoli
1/2 cup frozen baby peas
1/2 cup frozen green beans
1/2 cup cubed tofu, Chinese 5-spice style
(OR regular lowfat tofu plus 1 tsp. Chinese 5-spice powder)
1 cup cooked rice
Soy Sauce
Heat pineapple juice in pan with some soy sauce. Add garlic and
"sautee" for 1 minute. Add frozen vegetables. Cook 5 minutes or until
mostly thawed, stirring frequently. Add tofu (and spice powder if
using) and rice. Cook, stirring frequently, until heated through.
Serve immediately with additional soy sauce to taste.
