Neil Bernstein requested a recipe for beanut butter. The following is
from Tom Chasuk's wonderful book "The Bean Gourmet Presents the Greatest
Little Bean Cookbook" (Hearst Books). It has many fantastic and unusual
bean recipes. Most are low-fat or can be easily converted to lf/ff.
1 cup cooked Great Northern beans, drained. or 1 cup canned GN beans,
drained and rinsed
2 tablespoons reduced-fat peanut butter
In a small bowl, mash beans with a spoon until smooth. Add pb & blend
thoroughly.
(You could also use Dixie Diner's soy-based, lower-fat than regular pb,
Beanut
Butter to add to the beans)
