Sorry, but I deleted my digest, so I am not sure who it was who was looking for
a ff colelsaw, but here is one that I have had great success with and my notes
on it
Creamy Coleslaw (adapted from Cooking Light recipe)
3 tbsp. non-fat mayonnaise
3 tbsp. non-fat sour cream or non-fat plain yogurt
1 tsp. dijon mustard
1 tbsp. cider vinegar
1 tsp. sugar
1 tsp. crushed caraway seeds (optional)
1/2 tsp. each salt and pepper (add more to taste)
1 - 2 bags store-bought coleslaw mix (or shred your own)
In a med. mixing bowl, combine mayonnaise, sour cream (or yogurt), mustard,
vinegar, sugar and spices. Mix well. Place coleslaw mix in a large bowl, and
add dressing a bit at a time until desired creaminess is achieved. Serves 4.
Notes: The Cooking Light recipe called for low-fat mayonnaise and 1 tbsp. of
mustard; we used non-fat mayo and reduced the mustard to 1 tsp. as the
original was too mustardy tasting for us. This recipe doubles and triples really
easily. We had it on the weekend with a bunch of SAD friends over, and they
had no idea it was non-fat. A big hit.
