mushroom burgers

Excuse the question, but why does everyone want to buy ready made burger
patties?  Is it because it is easier or because they taste better?

I made some great mushroom burgers the other night (and I don't usually like
mushrooms except shitake) which took about 20 minutes start to eating...

Mushroom Burgers (as much as I can remember from Alison Holst's Meals without
Meat with a few fat reductions)

Finely chop and onion and couple of garlic cloves and saute for a few minutes. 
Chop up 150g of mushrooms small and add to the pan and saute for a few minutes
longer.  Meanwhile, in a bowl combine 1C fresh breadcrumbs (about 3 slices
wholewheat bread in the food processor for 30 secs), a handful of fresh chopped
parsley (flat leaf for more delicate flavour), an egg white (original recipe
had whole egg), I teaspoon cornflour (or normal flour worked fine).  Think that
was all!  Throw in the mushroom/onion/garlic mix and mix well.  Form into 4
patties and fry in a non-stick pan (this is important because they fall apart
really easily, maybe I should have chopped the mushroom smaller?  any other
suggestions to hold them together?)
Toast some hamburger buns, top with tomato sauce, pattie, pineapple ring,
sliced tomato and beetroot, lettuce, grated carrot - whatever you like.

and these are fantastic!
