To Maralyn,
For Christmas Day lunch, we're having roast veggies...all you have to do
is cut a normal potato, a sweet potato, a red onion, butternut squash
(peeled!) into chunks (about 1 inch chunks, like thick chips). Put them in
a non stick baking tray, spray with a couple of sprays of olive oil spray,
and roast at 220 degrees centigrade for about 45 minutes. They are
absolutely delicious!!!
