I got this recipe from a friend and eat two nights a week ever since
Ingredients:
1 can black beans
Flour or Whole wheat tortilla
Non fat sour cream
chopped onion, tomato, shredded lettuce, black olives and any other
chopped veggies you like
Heat black beans uncovered in the microwave for approximately 3 mins.
When warm but not steaming hot scoop onto tortilla, add sour cream and
chopped veggies, roll up and enjoy.
I usually eat some salsa and low fat baked tostitios and vegetarian
refried beans with this meal, it is very filling.
