Seitan

Seitan can be a bummer. Did they tell you what to mix with the flour before
you wet it, how to season the water with vegie powder to wet it, and what
kind of broth to boil it in (for boiled)?

The option my family likes is basically 'steak'. The seitan is rolled out
flat, about 1/2", then baked on a prepared sheet for about 25 minutes, then
flip for another 20. The seitan is then cut into strips for stir fries, or
fingers which I brush with barbeque sauce and bake until a little
charred...my family loves them.

I use the boiled stuff by putting it through the meat grinder and using it
just as I would ground b***f in meatloaf, and the vegetarian version goes
as quickly (if not moreso)!

Truly helpful cook books are "Table For Two" and "Vegan Vittles" for vegan
substitutions.
