Suman's has moved to Main St in Durham across from Brightleaf Square and
is now a sit-down restaurant. I've heard good things about it, but
haven't been there myself. There are several good Indian places in
Chapel Hill (East Franklin St) and Raleigh (India Mahal on Hillsborough
St, mentioned further down the list) as well.

Govinda's has closed. It was good, but far from low-fat.

What, Chapel Hill doesn't need directions? I prefer Weaver St Market (in
Carrboro) to Wellspring anyday. Both have good deli and hot foods, but
WSM makes their own bread.
I don't eat out very often, so I don't know of many low-fat restaurants,
but my current favorite restaurant is Sushi-Yoshi, between Chapel Hill
and Durham. They have good sushi, and tempura, teriyaki, etc for any SAD
folks. Probably not up to California standards, but I really like their
mixed vegetable sushi.
They're just off 15-501 south of I-40. Turn left at the Hardee's after the
Saturn dealer, and it's on the right. The building is beautiful
too--lots of windows so it feels very airy.
