Lauri in Japan was asking how to make yogurt cheese. Dead simple. Get a
small bowl, loosely stretch a piece of muslin over top with a rubber band,
and spoon some yogurt on top. Leave it overnight in the refrigerator, and
eureka! later next day you will have yogurt cheese on top, and yogurt whey
in the bowl (which somebody has suggested you can use as a substitute for
buttermilk).
