Hi,
The veg chicken you ate is not made from seitan. It is made of several
stacked layers of the skin that forms when boiling soya milk. It is
called bean-curd skin, and is sold in dry or fresh form. You cut and
stack piece, which stick together, and then cube. The recipe you mention
fries each piece in batter and then adds sauce. You could simply cook
each piece without the batter in the sauce.
