Here is an easy method for cooking beet greens adapted from Tomato
Blessings and Radish Teachings:
Rinse greens and chop leaves and stems. Water saute sliced red onion for
several minutes. Add beet greens, sprinkle with salt and pepper. Cover
with lid and cook over moderate heat until greens are tender, 3 to 5
minutes. Season with lemon juice or rice vinegar to taste.
