For those looking for Quark, I think Fromage Blanc may be the closest
nonfat equivalent.
Fromage Blanc is a thick yogurt cheeselike preparation. The one I buy is
from Vermont Cheese Company. In Washington, DC I buy it at the Fresh
Field/Whole Food/Bread & Circus chains of stores.
I find it less sour than yoghurt cheese, so it lends itself to combining
with lots of things.
