Yam Recipe

Lee Ann, here a recipe I love, but I do love yams.

Baked Yam and Squash
1 Yam - cubed
1/2 butternut squash - cubed
1 Granny Smith apple - cubed
1/2 cup water
1/3 cup brown sugar (more or less, to taste)
dash of cinnamon, optional

Put all of the cubes in a 2 quart baking dish. Add all of the water and
about 1/2 of the brown sugar. Pop into a 350 degree oven for about 40
minutes, until all cubes are soft. Check a couple of times to make sure
all the water hasn't gone -- cover the dish. Add the rest of the sugar
and whatever cinnamon you think appropriate when you remove from the
oven.

This is the original recipe - I always double it and freeze it in
individual containters. I do use 3 apples when I double the recipe; I
also find it takes much longer than 40 minutes to cook - more like an
hour and a half, but I've never had a problem with the water
evaporating. I mash it with a potato masher when I add the cinnamon.
