Just found this recipe at Publix supermarket. I haven't tried it yet, but
thought it looked interesting.
Tofu Vegetable Stew
1 large onion, sliced
2 med. potatoes quartered
1 stalk celery chopped
1 or 2 cloves garlic, chopped
12 oz tofu, cut in 1/2 inch cubes
1 summer squash, yellow crookneck or zucchini, chopped
1 cup water
1/3 cup soy sauce
1 bay leaf - pinch pepper
1/4 head cabbage, chopped
3 medium carrot, sliced
1/2 cup oil (omit and saute in broth or water)
Saute onions and garlic, then add tofu and saute a bit more. Add remaining
ingredients and bring to a boil, then reduce heat and simmer, covered for 40
-45 minutes. If desired, mix some of the liquid with a few spoonfuls of
flour and cook until thickened.
