Here is a recipe that will make rice pudding that is virtually fatfree. To get
as close to ff as possible, use skim milk, and egg sub. Soy milk did not
perform well in this recipe for me.
Rice Pudding
4 cups skim milk or oatmilk (oatmilk is not fatfree)
1 cup uncooked white or brown rice
1 tsp vanilla
2 eggs (not ff) or equiv ff egg sub
1 tsp cinnamon
2 T sugar or honey (not vegan)
1 cup raisins
Lightly spray casserole with vegetable spray. Add milk and rice, mix. Bake
uncovered at 350 for intervals of 15 minutes to equal an hour or until rice is
soft, stirring the mixture at each interval and returning to oven immediately
each time. When rice is soft, add remaining ingredients. Bake for an
additional 15 minutes, uncovered.
I like it best with oatmilk (3.5 gr fat for ea 8 oz serving) and no raisins.
If anyone finds a ff oatmilk, please advise.
