Chris asked about freezing lentils and maybe freezing lentils and rice.
As I've posted before, my regular staple freezer food is burritos made
from taco lentils and mexican rice. I make about twenty at a time and
freeze them for no-fuss meals.
Your lentils should freeze fine, just watch how you thaw them. Microwave
thawing can be uneven, and I've had some lentils turn to powder this way.
I usually thaw my burritos partially, then finish the cooking in the
toaster oven. Actually, I cook mine until the outside is crisp, giving it
more the feel of a chimichanga without the deep frying.
