Black Bean Soup
Makes:
8 cups
Ingredients:
2 1/2 cups black beans, soaked
7 1/2 cups vegetable broth
2 onions, chopped
1 large green pepper, chopped
3 teaspoons garlic, minced
2 teaspoons vegetable bouillon granules
1 tablespoon chili powder
2 green chili peppers, chopped
1 teaspoon dried oregano
1/2 teaspoon cumin
1/4 teaspoon black pepper
1/4 teaspoon distilled vinegar
Directions:
Combine all ingredients except for the vinegar and toppings in a pot
and bring to
a boil over high heat. Reduce the heat to low, cover, and simmer for 2
hours,
stirring occasionally.
Remove the pot from heat and stir in the vinegar.
