<Does anyone have a fatfree, no added oil recipe for Rice Pudding>
New Fashioned Rice Pudding
3 cups cooked short/medium grain rice
4 cups skim milk or fat free soymilk
1 cup chopped pitted dates
3/4 cup raisins or currants
1/2 tsp. ground nutmeg or cinnamon
2 tsp. vanilla extract
Combine cooked rice, milk, dates and raisins in a heavy saucepan. Bring
to a boil, reduce heat, then simmer for 10 minutes (stir constantly).
Remove from heat and add nutmeg and vanilla. Serve warm or chilled.
