PUMPKIN PIELESS
3/4 cup granulated sugar
1/2 cup whole wheat flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1 can (13 ounces) evaporated nonfat milk
1 teaspoon cinnamon
3 egg whites
1 teaspoon allspice
1/2 teaspoon nutmeg
2 teaspoons vanilla
1 can (16 ounces) pumpkin
Preheat oven to 350 degrees. Spray a 10 x 1/2 inch pie plate with
nonstick coating.
Combine all ingredients, except egg whites. Blend until smooth. Fold in
egg whites.
Pour into pie plate. Bake 45-50 minutes or until a knife inserted in
center comes out clean.
