Pumpkin Job in the crockpot

This was posted on another list and I have made it twice with lower fat
changes and it tastes great and is easy to make.

This was named when a teenager walked into the dining room and asked,
"Where's some of that pumpkin job?"

PUMPKIN JOB    6 servings

1 16 oz. can canned pumpkin
2 1/2 tsp pumpkin pie spice
2 tsp vanilla
1 12 oz. can evaporated skim milk (used 1 1/2 cups LF soy milk)
3/4 cup sugar (used 1/2 brown sugar and 1/4 white)
1/2 cup Reduced fat Bisquick (used LF Pioneer Baking Mix -- 1g fat per 
                              1/2 cup mix)
1 T fat sub (used "Lighter Bake" -- original recipe called for 2 T
             margarine)
1/2 cup egg replacer (used liquid replacer -- original recipe called
                      for 2 eggs)

Spray crockpot with non-stick cooking spray.  Beat ingredients together
until smooth with a hand mixer (used a whisk.)  Pour into crockpot.
Cook on LOW 6-8 hours, or HIGH 3-4 hours.  Spoon into cups and top with
LF/FF topping of choice. (Vanilla flavored LF yogurt is a nice tangy 
topping.)

Substitute for pumpkin pie spice:
        1 1/2 tsp ground cinnamon, 1 1/2 tsp ground nutmeg, 1/2 tsp
        ground ginger and a dash of ground cloves.
