substitutions

ok, after hearing all the information about stevia, the sugar replacer,
im interested in buying some.  but i can't find it anywhere!  does anyone
know of any health food store chains that sell it?  I am in the Albany,
NY area, if anyone knows of specific places here to get it.  

Second, i am going to try one of the pumpkin pies that are in the
archives, one of them in particular calls for liquid egg substitute. 
does anyone know if i can substitutue applesauce for that?  if so what is
the substitution ratio?  any thoughts on this would be greatly
appreciated!
