Thanks so much to the person who posted the banana
bread from "fat Free, Full Flavor". I was skeptical
about it, but I had 6 blackening bananas on the counter
that none of my kids would eat, so I tried it. The
texture was wonderful and the flavor was intensely
banana. It reminded me of those banana chips I used
to buy before I realized that they were fried.
Banana Bread
6 ripe bananas
1 cup sugar
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
Mash the bananas, sugar and vanilla together. Sift the
flour, baking powder and soda together. Mix the liquid
with the dry and pour into a loaf pan.
Bake for one hour at 350 degrees. Remove from pan and
let cool before cutting.
