Dear Tiffany,
Don't even think about eating persimmons until they are fully ripe and soft!
At that point, they are very good in baked goods (sub in any recipe
calling for ripe bananas). My favorite is to peel and remove the stringy
stuff in the core, run through a blender, then freeze the pulp and eat
like ice cream.
