OOPS, I goofed. Sorry Jacqueline. I haven't made beets in a while. It takes
longer than 3 minutes in the boiling water before you can easily peel the
beets.
I made them the other day and found it takes more like 10 to 15 minutes of
immersion in boiling water before you can easily peel the beets.
My favorite kitchen gadget is an old chopper that I found in an antique
store. My mom used one just like it when I was growing up. (I thought it
being in an antique store was just hilarious.) I use it pretty much just for
garlic, ginger and onions.
A Note on cutting onions. I found that if I refrigerate my onions in the
veggie drawer they usually don't make me cry.
