to Kate: sorry but the Green cook book is way off. Fava beans are twice as
big as limas and taste completely different. After cooking & peeling they are
a beautiful chocolate color, and have a strong nutty flavor. Limas don't
need peeling, are light green in color and taste completely different from
Favas. Smooth in texture but not as *meaty* tasting as favas. Broad beans do
look similar to limas but are bigger and are a very pale green in color.
