I have been requested to post the recipes for the Amish Friendship
Breads....from FRIENDSHIP BREADS: STARTERS AND RECIPES compiled by Jackie

I am assuming that you all know the basics of how to cook and bake so, for
instance, when it says knead dough, i am gonna assume you know to flour
your work surface....if you have any questions, consult a good basic
cookbook.
Please note: I have tried hard to make these as ff as possible. There are
some places where i faikled and there I ask for your help as I don't know
what to sub. Anywhere it says applesauce, i am subbing that for the same
amount of oil. Where it says 3 eggs I tell you to use 3 ES (Egg
Substitute). Where the recipe calls for nuts, I have made them optional.
Sometimes they were part of the recipe. I tell you to use a prepared
pan...that means use whatever means you prefer to grease it, cooking spray,
liquid lecithin, crisco, what you prefer. When it says flour, I never use
white flour. I always use ww pastry flour.
Friendship Starter:
Day 1: Mix 1 C nf milk
1 C flour
1 C sugar in a large GLASS or CERAMIC bowl or jar. Use a wooden
spoon. (DO NOT USE ANY METAL). cover loosely with plastic wrap and leave
it on the counter
Days 2-5 leave it alone
Day 6 Stir ONCE
Day 7 feed with 1 C sugar, 1 C flour & 1 C nf milk. Mix this first then add.
Days 8-9 Stir Once each day
Day 10 do what you did Day 7
Baking: take out 1 C starter for baking and 1 C to give to a friend.
Continue to maintain the starter you have left.

Friendship Yeast Starter
Day 1: Mix 1 pckg dry yeast (DO NOT USE RAPID RISE YEAST)
2 C warm water in a Large GLASS or CERAMIC bowl. Usde wooden
spoon. DO NOT USE ANY METAL). Mix in 2 C flour. cover loosely with
plastic wrap and leave it on counter.
Days 2-4 Stir once each day
Day 5 Feed with 1 C sugar, 1 C flour & I c nf milk. Mix first then add.
Days 6-9 Stir once each day.
Day 10 do what you did day 5
Baking: take out 1 C starter for baking and 1 C to give to a friend.
Continue to maintain the starter you have left.

Maintaining Starter:
When your starter is first ready for baking, remove the amount needed for
the recipe and remove 1 C to give to a friend. ( I don't see why this
couldn't be frozen for future uses. Anyone know???) Leave the rest of the
starter on the counter covered loosely.
Stir it once each day and feed it every 5th day with 1 C flour, 1 C sugar
and I C milk.
The easiest way to select feeding days is to use calendar dates that can be
divided by 5. You may have to skip a day or two to get on this schedule,
but that won;t hurt. Be sure to stir each day.
You can remove starter any day you want for baking or to give to a friend.
Always leave 1 C in the starter container and continue feeding every 5th
day.
The feeding schedule should give you all the starter you want on a regular
basis. Always take out 1 or 2 C after feeding. If you don;t need any
starter for baking or giving, you will still have to take some out and
discard it {can it be frozen??} This way you will always have a managebale
amount of fresh starter.
Every 30 days, transfer your starter to another container and thoroughly
wash and scald the container before putting the starter back in. If your
starter is in a plastic bag, change bags every 30 days.

Friendship Bread
Place 1 C starter in large bowl. Add 3/4 C applesauce and 3 ES. Mix well. Add
2C flour
1C sugar
1 t baking powder
1/2 t baking soda
2 t cinnamon
Pour into 2 prepared loaf pans, cinnamon and sugar coated. Sprinkle top
with more cinnamon sugar.
Bake 350 for 40-50 min

Fruit and Nut Friendship Bread
to basic recipe add 1- 1/2 C fruits and/ or nuts
1t vanilla

Friendship Bread with Pudding
1 C starter
3/4 C applesauce ( I am wondering how this would work with some of those
pure fruit only spreads)
3 ES
1/2 C nf milk
1 t vanilla. Mix well.
Add 1 sm box instant pudding (I believe there are some lf if not ff
versions available)
2 C flour
1 T baking powder
1/2 t baking soda
1 t cinnamon
1/2 C chopped nuts (optional)
pour into 2 prepared baking pans & diusted with cinnamon & sugar.
sprinkle more cinnamon & Sugar on top. bake 350 for 35-40 min

Friendship cake:
1 C starter
2/3 applesauce
2 ES
2 C flour
2 t baking soda
2 t cinnamon
2 t vanilla
Mix well. Add:
1/2 C ch nuts (optional)
1 (20 oz ) can crushed pineapple drained (I wonder if I could use the
drained paineapple juice in place of some of the applesauce. anyone know??
pour into prepared and floured 9X13 pan
Mix until crumbly & sprinkle over batter
1 C packed br sugar
1/4 C butter (I really don't know what to sub for this, any ideas??? I am
told liquid lecithin might be a possibility, has anyone tried it??)
1T flour
bake at 350 for 35-40 min

Friendship Cornbread
3/4 C starter
1/2 milk
3 ES
1 (17 ox) canned creamed style corn (someone assist me please...is this lf
or are there any lf or ff versions available??)
1/4 C applesauce
Mix well in med bowl.
In a separate large bowl mix:
1 1/2 C yellow cornmeal
2 t baking powder
1 t baking soda
1/2 t blk pepper
Add wets to drys and mix only until drys are moistened. bake prepared pan
9X13 at 375 for 25 min
variation: add 1/4 C ch jalapenos and/or 1/2 c ff grated cheese

Friendship pancakes
Mix in med bowl
1/3 C starter
1C nf milk
1 ES
2 T applesauce
in a large bowl mix
1 C flour (play around with various flours..buckwheat, oat...0)
2 t sugar
1 t baking powder
1/2 t baking soda
add wets to dry and mix til moist. cook your pancakes however you fancy.
Personally I hate and despise all that a pouring and a flipping, so i
prepare a baking dish and sperad my pancake batter and bake it at 350 til
done. recipe as written makes 8-10 pancakes.

Friendship Cinnamon rolls
Mix in med bowl:
1 C starter
1 ES
1/2 applesauce
In a large bowl blend
1 1/2 C flour
1/4 C sugar
1 T baking powder
1/2 t salt
wets to drys & mix.
knead dough. when smooth and elastic rll out to rectangle 1/2 " thick.
Mix 1/3 C sugar and 1 t cinnamon (I like mouch more cinnamon than this)
Now this part is tricky and no fat free baking book has ever told me how to
sub for this step, your recommendations are welcome
cut 1/2 stick butter into small pieces and dot over dough. Sprinkle with
cin/sugar reserve some for the roll tops. Roll and slice into 3/4" slices.
Place on prepered baking sheet. sprinkle tops with the reserved stuff.
bake 350 for 20 min
can frost if desired (yyyyyyuuuuuuuuccccccckkkkk) with powdered sugar and
nf milk frosting

Friendship buscuits
med bowl
1 C starter, add 1/3 C applesauce
large bowl:
1 C flour
3/4 t soda
wets to drys til moistened
drop yt tablespoonfuls onto ungreased baking sheet. bake 350-10-15 min

Friendship coffee cake
med bowl
2 C starter
2/3 C appelsauce
2 ES
large bowl
2 C flour
1 1/2 C soda
1 C sugar
1 1/2 t cinnamon
1 C ch nuts (optional)
1/2 C raisins or other dried fruit (optional)
wets to drys til mositened
por into prepared 9X13 pan
Mix
1 C packed brown sugar
1/4 c butter (again, I don;t know what to sub to make a nice crmbly
topping, any ideas??)
1/2 t cinnamon
sprinkle over batter
bake 350 for 40-45 min can make 1/2 recip in 8" sq pan

Friendship zucchini Bread
large bowl:
1/2 C starter
1/2 C packed brown sugar
1/2 C applesauce
2 ES
1 t vanilla
1 C grated zucchini.
Mix well.
in other bowl mix
2 C flour
1/2 t baking powder
1t baking soda
1/2 t each nutmeg & cinnamom
wets to dry til moist. prepared loaf pan. 325 for 50-60 min

Friendship Fruit starter #1
mix 1 (20 oz) can sliced peaches, chopped
2 1/2 C sugar
1 T or 1 pcge yeast (don;t use the rapid rise stuff) in one gallon glass or
ceramic jar.
days 2-9 stir with wooden spoon
day 10 add 20 oz crushed pineapple (can)
days 11-19 stir once
day 20 add 2 1/2 C sugar, 29 oz can fruit cocktail, 10 oz jar maraschinno
cherries which i personally despise and omit. I sub more fruit cocktail or
canned pears or whatever.
day 21-29 stir once each day
day 30 drain fruit, reservinf juice. put 1 1/2 C fruit each in jars. put
1 1/2 C juice in each jar. use fruit to bake cake and juice in place of
the yeast to make more starter as in Fruit pre-starter below:

Fruit pre-starter
Day 1 mix in 1 qt jar
1/3 C brandy
1 C sugar
16 oz can sliced peaches with syrup
cover with palstric wrap and leave on counter
days 2-7 stir once each day with a wooden spoon
day 8 there will be 3 C pre-starter. five half to a friend and use hal in
place od yeast in fruit starter #1. personally, I think this is foul.

Friendship fruit starter #2
day 1 drain and cop and mix in glass or ceramic bowl:
15 oz can pineapple chunks
17 oz can apricot halves
16 oz can sliced peches
10 jar maraschinoi cherries (never ever found in MY kitchen!!)
1/14 C each sugar and brandy
stir it all up with a wooden spoon and leave it on the counter, covered
with plastic wrap. stir every 3rd day for 3 weeks.
day 21 it's ready to use....drain, reserving juice. put 1 1/2 C fruit in
jars. put 1 1/2 C juice in each jar. use fruit to bake cake below and
juice in place of brandy to make more starter.
Fruit Friendship cake
mix in large bowl:
1 yellow cake mix (I despise and abhor so-called convenience food and i use
any lf or ff yellow cake recipe instead
1 sm box vanilla or lemon instant pudding (haven't figured out how to do
without this)
4 ES
2/3 c appelsauce
2 t orange extract optional (or orange flovred liqeur or orange rind)
add 1 1/c fruit from starter #1 or #2
1 C ch nuts, optional
1 C golden raisins or other dried fruit, optional
pour into prepared tube pan. bake 350 for 1 hour
