Someone was asking about Egg Substitutes, and that reminded to ask:
If you're replacing whole eggs with egg whites in a recipe, what is the
proportion to use? 2 egg whites for each egg, or what?
Not to offend anyone's sensibilities, of course, but I don't always have
substitutes in the 'frig...
