Hello everyone! We have received numerous e-mails from a handful of you
guys stating that our banana bonanza bread was a little less than bonanza!
:-)
We've also received e-mails inquiring about the use of baking soda or
baking powder. Also, other banana bread recipes seem to have floated into
some of your mailboxes. We hope to clear all questions today! THIS IS THE
DEFINITIVE RECIPE AND BAKING INSTRUCTIONS FOR Jerry Brick's and Roger
Terry's BANANA BONANZA BREAD! We apologize for ANY confusion or incorrect
postings of this recipe! :-)
Tips: If you use large bananas, incorporate 1/3 cup more flour.
All-purpose flour is suggested.
Banana Bonanza Bread
6 ripe bananas
1 cup sugar
1 tsp. vanilla extract
2 c. all-purpose flour
1 tsp baking soda
1 tsp. baking powder
cinammon - amount you desire!
Place peeled bananas, sugar, vanilla extract into a large mixing bowl.
Mash or mix (with mixer) these ingredients until the mixture resembles
cake batter with little banana remnants or pieces. (*NOTE* Make sure
bananas are completely mashed. There SHOULD be banana remnants or tiny
pieces of bananas in mixture!)
Next,in a separate bowl, sift flour, baking soda, and baking powder
together. Then, add these sifted ingredients to the delicious banana
mixture! Mix until a dough consistency is reached. Pour into a 9x9 baking
dish. (*NOTE* A glass dish works wonderfully, too! Also, we've never
coated or sprayed our baking dish with cooking spray before we've added
the mixture to the baking dish, and it has turned out perfect each time!)
Sprinkle cinnamon on top of mixture if you desire! YUM! Pre-heat oven to
350 degrees. Once oven has reached 350 degrees, bake bread for 60 minutes.
After the hour has passed, you SHOULD have Banana Bonanza Bread! ENJOY!
