Here is a marinade from "Vegetarian Planet" for a curry marinade for
vegetables (minus the olive oil!):
3 Tbs. balsamic vinegar
2 Tbs. orange juice
4 garlic cloves
1 Tbs. minced fresh ginger
2 Tbs. curry powder or to taste
1/2 tsp ground cinnamon
1/2 tsp. ground black pepper
1 Tbs. honey
The author suggests you use vegetables like onions, "sweet" peppers, and
mushrooms (probably eggplant and summer squashes too). In her recipe, she
served the vegetables over millet with p**nuts.
