For Steph who is having the "meat and 3 veg" mentality...the in between step
might be to make bean m*at loaf or mushroom/carrot loaf etc. Or vege burgers.
You could serve these with some tomato rice (rice cooked in tomato juice with
spices such as cumin and paprika, and some green pepper) and some broccoli,
carrot sticks (steamed ) or whatever. If you are not vegan maybe quiche or
some kind of filo pie, or pita pizza to replace the meat component. Soups are
good with some cornbread sometimes...although that is practically a one pot
meal again.
