2 cups water
2 cups whole wheat flour
2 cups unbleached bread flour
Mix together in bread machine. This takes care of the tedious but
necessary kneading. Go through entire first mixing cycle. Remove from
machine and soak in ice water at least one hour (two hours is even
better). Knead under water, rinsing frequently until water is clear.
This should give you about two cups of gluten to use in your favorite
recipes.
