I peel the ginger, slice it into "pennies," put it in a jar, cover it with
sherry, put a clean lid on the jar, and refrigerate it. If clean utensils
are used to retrieve whatever amount you need, the ginger will last as long
as you have it. (I once prepared too much, and it was good for 2-3 years!)
Unsliced peeled ginger in a ziplock freezer bag works, but it dries out a
little and has to be thawed to mince.
