For those asking about Ener-G Egg Replacer:
I have success using potato starch or rice flour as a replacement for
Ener-G Egg Replacer in recipes. In fact, for those who observe Passover,
Ener-G is not allowed, so you can just use potato starch instead. For
those of you who have never used it, it does not act like eggs in recipes
that call for them (such as scrambled eggs, omelets, etc.), rather it's
the binding effect that it has in recipes.
