Regarding freezing tofu, I have never heard of freezing silken tofu. I
THINK when a recipie calls for freezing tofu, it is referring to the regular
tofu. Silken tofu is most commonly used in Japanese cooking and in
dairy-free dessert recipies. I have a great (and easy) recipie for mock
eggnog using silken tofu, if anyone is interested.
