Freezing tofu is a process that should only be used with regular tofu.
Silken tofu has a completely different texture to begin with. Most
silken tofu packages warn that the tofu is *not* to be frozen. It's a
good warning to heed :-)
On the topic of determining nutritional values...MasterCook will
calculate nutritional value for the recipes you enter. If an ingredient
is not in the database, it can be added. (And...it is available for Macs
and pcs).
